Paleo Friendly Garden Visit Lunch

BerkThis past weekend we finally took time to look around and open our eyes. We were not disappointed in the NW Hills Studio Tour on Saturday. And yesterday we visited an old friend, Ernie DeMarie and his wife Grace. Of course the garden was mesmerizing. Ernie is another seedaholic, one with a South African and Chinese bent. And he grows amazing plants from NARGS Seedex leftovers too. 

Since I did not want to bring coals to Newcastle, I made some dishes, one of which he quite enjoyed. The paleo friendly recipe follows. 

Sweet Potato Salad

4 sweet potatoes (yellow or white) 
1/ small red onion finely chopped
1/2 cup dried cherries or cranberries
2 Tbsp olive oil
2 Tbsp fresh lime juice
1 Tbsp cider vinegar
1/4 tsp allspice
1/4 tsp thyme
1/8 tsp cayenne
Salt and pepper 
Cook the sweet potatoes until firm. Skin. Cut into 1 inch cubes. 
Add the rest of the ingredients and mix. Refrigerate for a couple of hours.

We enjoyed the garden
